By any chance, does anyone know of any frequencies one might hear anything from STS-125 to ground control? Or any other frquencies they might be on?

Except for ascent and decent, the radio transmissions to ground control are digital and via the Tracking and Data Relay Satellite system. I think those are around 15 GHz. I'm sure someone can give you the ones for take off and landing but those don't cover much of the planet. The ground track for Hubble is also in a much more configned orbit (doesn't get to higher latitudes like ISS) so the chance of even seeing STS-125 is also lower.
